Easy No-Bake Energy Bites

Easy No-Bake Energy Bites are the kind of treats where you simply throw all the ingredients in one bowl, pop them in the fridge and call it a day. It's really easy (except for the waiting part, I'm not the most patient person you'll ever meet).


These cute little bites are crazy healthy as they are made up of figs, a variety of nuts and seeds. Plus, no sugar, only honey! We use unsweetened chocolate for this recipe but for added sweetness you can use sweetened chocolate.

Health Benefits:


Dried figs have a lot of dietary fiber which makes you full faster, and it's an excellent source of minerals like potassium, iron and calcium, and they are rich in antioxidants and complex carbohydrates.


A study done by Harvard has shown that people who have regularly included peanuts in their diets are less likely to die of any cause especially heart disease.


Sunflower seeds are replete with essential fatty acids like linolenic, oleic and palmitic acid, which help in the formation of collagen and elastin, delivering smoothness to the skin tissues.


Flax seeds also have linolenic acid which is beneficial for you if you want that smooth, glowing skin. According to the USDA, one tablespoon of ground flax seeds contains the following:

  • Protein: 1.3 grams

  • Carbs: 2 grams

  • Fiber: 1.9 grams

  • Total fat: 3 grams

  • Omega-3 fatty acids: 1,597 mg

  • Vitamin B1: 8% of the RDI

  • Vitamin B6: 2% of the RDI

  • Folate: 2% of the RDI

  • Calcium: 2% of the RDI

  • Iron: 2% of the RDI

  • Magnesium: 7% of the RDI

  • Phosphorus: 4% of the RDI

  • Potassium: 2% of the RDI

Ingredients


  • 1 cup chopped dried figs

  • 1 tbsp.+ 1 tsp. sunflower seeds

  • 1/2 cup Honey Bunches of Oats cereal

  • 2 tbsp. flax seeds

  • 3 tbsp. honey

  • 1/2 cup coarsely chopped peanuts

  • 1/4 cup finely chopped peanuts

  • 1 cup meltable chocolate chips or chocolate bar

  • 2 tsp. oil

  • Coconut flakes (optional)

Instructions

  1. In a medium bowl, mix the figs, sunflower seeds, cereal, flax seeds, honey, and peanuts until combined.

  2. Take about 1 tablespoon of the mixture and roll between your palms to create balls.

  3. Repeat step 2 until you have finished with al of the mixture.

  4. Refrigerate them for around 3-5 hours. For best results, refrigerate overnight.

  5. In a small, microwave safe bowl, add in your chocolate chips and oil. Microwave for 1 minute or until melted, stirring every 15 seconds.

  6. Dip your bites into the chocolate and place on parchment paper.

  7. Sprinkle the bites with coconut flakes.

  8. Refrigerate for 1-2 hours.

Tips

  • I highly recommend using a good quality chocolate bar or chocolate chips because not only will you taste the difference but better quality chocolate melt easier and become thinner when melting. This allows for the perfect dip.

  • If you don't want to refrigerate the bites for 1-2 hours after you have dipped them in chocolate, you can freeze them for 30 minutes!
