Oatmeal Chocolate Chip Cookie Pancakes




Is there anything better than starting off your day with pancakes? I think not. Especially when they're Chocolate Chip Oatmeal Cookie pancakes! These bad boys are so dang tasty and are the perfect addition to your breakfast spread. I mean no brunch or breakfast is complete without pancakes am I right?


This recipe creates insanely soft, fluffy, not too sweet pancakes that have the perfect flavor combos. Might I say, you can even consider this recipe to be healthy. With minimal sugar (only 1 tbsp) and oats you can definitely get away with these as morning food. But who are we kidding, any dessert can pass as morning food. Anyways, I am so excited to give you this recipe, so let's start!



Why should you make these Oatmeal CCC Pancakes?


  • It tastes better than your average pancakes - Who wouldn't want pancakes that taste like cookies for breakfast?

  • The texture!! - These pancakes are crazy soft and moist. You'll never be able to get over it! (you might get addicted to them no joke, sorry not sorry)

  • It's low-key healthy - Umm guess what.. this recipe only calls for 1 tablespoon of brown sugar. That makes this recipe a lot healthier than alternatives. Plus, we are using oats, aka one of the healthiest grains on Earth.

  • You can put this together in around 30 minutes - These pancakes don't need that much time to put together. That way, it'll be on your table and in your stomach in no time!



What do I need for this recipe?


This recipe might call for a couple more ingredients than your average pancake recipe but it is SO worth it. It takes pancakes from okay to gourmet!


  • Egg- to bind and moisten. Make sure to use room temperature eggs!

  • Buttermilk- to make the batter fluffier. You can also substitute this for regular milk.

  • Brown butter- to get the pancakes to taste like chocolate chip cookies.

  • Maple syrup + brown sugar- to sweeten the pancakes. You can change the suggested amount based on your preference.

  • Vanilla extract- to add more flavor.

  • All-purpose flour-

  • Old-fashioned oats/quick oats

  • Baking powder + baking soda- using both will get your pancakes to rise more and create a fluffier texture.

  • Salt- this will create a balance from the sweet ingredients.

  • Cinnamon- to add more flavor

  • Semisweet chocolate chips- my fav! these will melt and leave pockets of chocolate goodness. Feel free to change the amount based on your liking.




What should I top these off with?


Although you can definitely have these pancakes on their own, here are a couple of options to add to them!

  • Maple syrup/pancake syrup

  • Whipped cream

  • Fresh fruits: strawberries, bananas, blueberries, etc.

  • Chocolate Chips

  • Nutella

  • Nuts: almonds, hazelnuts, etc.

  • Ice cream (mmm vanilla!)

  • Fruit compote

  • Jams

Recipe Details:

Makes: makes 8-10 pancakes

Time spent

Prep time: 5 minutes (+ 10 mins rest time) | Bake time: 15 minutes | Total time: 30 mins

 

Ingredients:

  • 1 egg

  • 1 cup buttermilk

  • 2 tablespoons brown butter

  • 2 teaspoons maple syrup

  • 1/2 teaspoon vanilla

  • 1 cup all-purpose flour

  • 1/3 cup old-fashioned oats

  • 1 tablespoon brown sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/2 cup semisweet chocolate chips


Instructions:

  1. In a large bowl, beat eggs well. whisk in the buttermilk, brown butter, maple syrup and vanilla.

  2. In a separate large bowl, mix all-purpose flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon until well combined.

  3. Slowly mix the dry ingredients into wet ingredients until well incorporated. Let the batter rest for 10 minutes to thicken.

  4. Meanwhile, heat a griddle or large nonstick pan over medium heat. Once heated, brush lightly with butter or oil.

  5. Stir the chocolate chips into the batter. Pour around 1/4-cup of batter for each pancake onto the hot greased griddle/pan. Cook on the first side until edges are dry and bubbles form, about 2 minutes. Flip the pancake and allow to cook on the opposite side until cooked thoroughly and is golden brown on both sides. Transfer to a plate. Repeat with remaining batter. Make sure to stir the batter occasionally to prevent oats and chocolate chips from sinking.

Tips:

  • Don't over-mix the batter. It's okay if there are a couple of lumps here and there, just mix until the flour is combined.
