These French Crepes are so thin and light and are best served with fruit, whipped cream or chocolate spread (shh, you can even mix all three). It is super common in France to have crepes eaten as breakfast, so you can definitely get away with having a few (or many) during the morning hours. I personally don’t think anyone would ever not like these. This recipe creates crepes that are so soft, yet so thin. The texture is ever so perfect, as it is so delicate and soft. It’s delicious and the best part is: it doesn’t take a long time to make. You can enjoy it with tea or coffee.

1 cup milk
3 Eggs
3 tbsp. butter
1/4 tsp. salt
2 tbsp. sugar
1 cup flour
1/4 tsp vanilla powder/extract
TOPPINGS (OPTIONAL)
Nutella Chocolate Spread
Strawberries
Bananas
Blueberries
Powdered Sugar
In a medium bowl, mix your milk and eggs until combined. (you can use a blender for this)
Add your salt, sugar, and vanilla to the mixture. Remove any lumps that have appeared.
Add your butter and mix again, removing any lumps that have formed.
Using a sifter, pour in the flour. This will reduce the amount of lumps in the batter which will ensure soft and thin crepes. Mix until incorporated. (You can use a blender to help remove them)
Let your batter sit for 5 minutes.
Heat up your pan and lightly grease using a little butter or oil.
Pour about 1/4 cup of the batter on the pan and evenly distribute it around.
When the sides begin to turn golden brown (which takes about 1-2 minutes), flip the crepe to the other side.
Remove it from the pan after about 1-2 minutes or until it has turned into a lightly golden color.
Repeat the previous step with the remainder of your batter.
Top off with your favorite toppings or keep plain.
When you pour your batter onto your pan, immediately start to swirl it around the pan to insure a thin even crepe.
Make sure you get rid of any lumps in your batter. This will ensure a soft and thin crepe. Using a blender helps to make this process easier.
